Coljac Café, located in Farmington, Missouri, has integrated Bitcoin and Lightning Network payments into its operations. The business initially utilized the Coinos.io platform for transactions and has since transitioned to Square, which supports Bitcoin payments for over 1 million merchants.

The adoption of Bitcoin at the café served as a catalyst for a regional movement. Currently, more than 40 independent businesses, including local farmers and diners in the area south of St. Louis, have begun accepting Bitcoin as a form of payment.

Owner Jessica Goff reports that while the majority of daily transactions are still conducted via cash or credit cards, the café serves as a central hub for local Bitcoin meetups. The initiative has contributed to the development of a local circular economy within the region.

Information regarding the network of participating merchants is tracked through the BTCmap.org directory. The project aims to provide residents in Farmington and the surrounding Missouri region with the practical option to conduct daily transactions using Bitcoin.
