Coljac Café in Farmington, Missouri, has integrated Bitcoin and Lightning Network payments into its operations. The business initially utilized Coinos.io for processing and has since transitioned to Square, which supports Bitcoin transactions for over 1 million vendors.

Owner Jessica Goff implemented the payment system after collaborating with local Bitcoin users who frequented the shop for meetups. While the majority of daily transactions at the café are still conducted via cash or credit cards, the establishment now serves as a central hub for a regional Bitcoin-focused economy.

The initiative has expanded beyond the café, creating a network of more than 40 independent merchants, including farmers and local diners, who accept Bitcoin across the region. This corridor of businesses spans areas in and south of St. Louis, Missouri.

The project aims to facilitate a local circular economy where residents can utilize Bitcoin for daily purchases. A directory of participating businesses within a two-hour radius of the café is currently maintained via the btcmap.org platform.
